Muoi Xiem restaurant opened its doors just last month, and it’s putting some new twists on an old favourite: banh xeo (Vietnamese crepes). Luu Van Dat takes a bite.
Banh xeo is not an unfamiliar dish to me since I ate it during my childhood countless a number of times.
But recently, at a newly opened restaurant, I was treated to a different taste sensation created by the 66-year-old chef Nguyen Thi Xiem, known also as Mrs Muoi Xiem, who last year was invited to make banh xeo at the Smithsonian Folklife Festival in Washington, DC.
